RESCUE OUR PLANET--MOVE TOWARD MEATLESS!

This February, I spent time researching the environmental impact of human consumption of animal products. What I discovered was life changing. Now, to be honest: I have loved and eaten meat and dairy all of my life. However, once I learned about the extent of the damage done to our planet on a meal-by-meal basis when meat and dairy are on my plate, it was an easy choice to make some changes. I read a lot of articles and watched several documentaries. I worked for a week with a vegan chef who helped me discover some recipes that would make giving up meat and dairy much more appealing to me. And I created some educational materials to share at my school and within the community to help spread the word about ways that everyone can make a big difference if each person reduces or eliminates the consumption of animal products. It's a way to make a direct impact as an activist for the health of our earth as well as our bodies. When my school eventually returns to meeting in person, I will resume working to create a shift towards a "Meatless Monday" culture and options in our school lunch offerings. I hope this is a springboard for growing this mindset and activism to take better care of our planet. Meanwhile, I encourage you to also consider cutting back on or eliminating animal products from your diet. I am including some of the recipes our family has been enjoying for you to try at home in the links below. You will also find a place to consider donating to a plant-based hunger relief effort during this pandemic and links to learn about your own "foodprint" and how you might consider making changes.
